Ingredients

For the chicken:

For the rice:
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup white rice
  • 2 cups chicken broth
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 tablespoon jerk seasoning

Method

1. In a large skillet, heat the olive oil over medium-high heat. 2. Season the chicken thighs with jerk seasoning and add to the skillet. Cook for 5-6 minutes on each side, or until browned and cooked through. 3. In a small bowl, whisk together honey, soy sauce, and lime juice. Pour the mixture over the chicken and toss to coat. 4. Remove the chicken from the skillet and set aside. 5. In the same skillet, heat another tablespoon of olive oil over medium heat. 6. Add the onion and garlic and cook for 2-3 minutes, or until softened. 7. Add the rice and cook for 1-2 minutes, or until lightly toasted. 8. Add the chicken broth, black beans, red bell pepper, and jerk seasoning. Stir to combine. 9. Bring the mixture to a boil, then reduce the heat to low and cover the skillet with a lid. 10. Simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed. 11. Fluff the rice with a fork and serve with the jerk chicken.

Notes

For a spicier dish, add more jerk seasoning or a pinch of cayenne pepper.
