Ingredients

  • 1 head of cauliflower
  • 2 cups of basmati rice

  • 1 teaspoon of ground allspice
  • 4 cups of vegetable broth

Method

  1. Wash the rice in a colander until the water runs clear. Set aside.
  2. Cut the cauliflower into small florets.
  3. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent.
  4. Add the cauliflower florets to the pot and sauté for 5 minutes.
  5. Add the cumin, paprika, cinnamon, and allspice to the pot and stir to combine.
  6. Add the rice to the pot and stir to combine.
  7. Add the vegetable broth to the pot and stir to combine.
  8. Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
  9. Simmer the mixture for 45 minutes or until the rice is cooked and the liquid has been absorbed.
  10. Remove the pot from the heat and let it sit for 10 minutes.
  11. Using oven mitts, carefully flip the pot over onto a serving platter, so that the cauliflower and rice are now on top.
  12. Serve hot and enjoy!
