Method

  1. Begin by rinsing the rice in a fine-mesh strainer under cold water until the water runs clear.
  2. In a medium-sized saucepan, add the rinsed rice, water, olive oil, salt, and black pepper. Bring to a boil over high heat.
  3. Once boiling, reduce the heat to low and cover the saucepan with a lid. Allow the rice to simmer for 18-20 minutes or until the water has been absorbed and the rice is tender.
  4. Remove the saucepan from the heat and allow the rice to sit, covered, for an additional 5 minutes.
  5. Fluff the rice with a fork and add the chopped cilantro, lemon juice, and lemon zest. Mix well to combine.
  6. Adjust the seasoning to taste and serve immediately.

Notes

If you do not have fresh cilantro, you can use dried cilantro instead. Simply use 1 tablespoon of dried cilantro in place of the 1/4 cup of fresh cilantro.
