Add chopped potatoes, carrots, green peas, and cook for 5 minutes. 6. Add turmeric powder, red chili powder, coriander powder, and salt to taste. Mix well. 7. Drain the water from the soaked rice and add it to the pot. Mix well. 8. Add 2 cups of water and bring it to a boil. 9. Reduce the flame to low and cover the pot with a lid. Let it cook for 20-25 minutes or until the rice is cooked. 10. Once the rice is cooked, turn off the flame and let it rest for 5 minutes. 11. Fluff the rice with a fork and garnish with coriander leaves.
