- 2 tbsp chopped fresh parsley
- 2 tbsp chopped fresh mint
- 2 tbsp olive oil
- 2 tbsp white wine vinegar
- Salt and pepper to taste

Method
- Rinse the rice in a sieve under cold running water.
- Put the rice in a medium-sized saucepan and pour over the boiling water. Add a pinch of salt and stir well.
