Prep Time

Cook Time

The cook time for this recipe is approximately 45 minutes.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup uncooked wild rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 6 cups chicken broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp flour
  • 1 cup milk or heavy cream

Equipment

  • Dutch oven or large pot with lid
  • Cutting board
  • Knife
  • Measuring cups and spoons
  • Wooden spoon or spatula

Method

  1. Heat the olive oil in a Dutch oven or large pot over medium-high heat.
  2. Add the chicken and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the pot and set it aside.
  3. Add the onion, garlic, carrots, and celery to the pot and cook until the vegetables are soft, about 5 minutes.
  4. Add the flour to the pot and stir to combine. Cook for 1-2 minutes to cook out the raw flour taste.
  5. Add the chicken broth, wild rice, thyme, bay leaf, salt, and pepper to the pot. Stir to combine.
  6. Bring the soup to a boil, then reduce the heat to low and cover the pot with a lid. Let the soup simmer for 30-40 minutes, or until the wild rice is tender.
  7. While the soup is simmering, shred the chicken into bite-sized pieces.
  8. Once the wild rice is tender, add the shredded chicken and milk or heavy cream to the pot. Stir to combine.
  9. Let the soup cook for an additional 5-10 minutes, or until the chicken is heated through and the soup is hot and creamy.
  10. Remove the bay leaf before serving.

Notes

This soup can be made ahead of time and stored in the refrigerator or freezer. If you're making it ahead of time, wait to add the milk or cream until you're ready to reheat it.
