Ingredients

  • 1 cup basmati rice

  • 1 tsp chana dal
  • 1/4 tsp asafetida
  • 3-4 dried red chilies
  • 10-12 curry leaves
  • 1/4 tsp turmeric powder
  • 1 tsp salt
  • 2 tbsp lemon juice
  • 1/4 cup chopped cilantro (optional)

Method

  1. Wash the rice in cold water until the water runs clear. Drain the rice and add it to a large pot with 2 cups of water. Cover the pot and bring it to a boil over high heat.
  2. Reduce the heat to low and let the rice simmer for 15-20 minutes, or until all the water has been absorbed and the rice is tender.
  3. Fluff the rice with a fork and set it aside.
  4. In a large skillet or wok, heat the oil over medium-high heat.
  5. Add the mustard seeds, cumin seeds, urad dal, and chana dal to the oil and fry for 2-3 minutes, or until the mustard seeds start to pop.
  6. Add the asafetida, dried red chilies, and curry leaves to the skillet and fry for another minute.
  7. Add the cooked rice to the skillet and stir well to combine with the spices.
  8. Add the turmeric powder, salt, and lemon juice to the skillet and stir well.
  9. Reduce the heat to low and let the rice cook for another 5-10 minutes, stirring occasionally.
  10. Garnish with chopped cilantro (optional) before serving.

Notes

  • Use freshly squeezed lemon juice for the best flavor.
  • Adjust the spice level to your liking by adding more or less red chilies.
  • If you don't have asafetida, you can substitute it with garlic powder.
