- 1/4 cup dried red chillies
- 1/4 cup sesame seeds
- 1/4 cup chana dal (split yellow gram)
- 1/4 cup urad dal (split black gram)
- 1/4 cup peanuts
- 1/4 cup cashews
- 1/4 cup grated dry coconut
- 1/4 cup lemon juice
Equipment
- Heavy-bottomed pan
- Grinder or blender
Method
- Heat a heavy-bottomed pan over medium heat.
- Add coriander seeds, cumin seeds, black peppercorns, fenugreek seeds, mustard seeds, turmeric powder, dried curry leaves, dried red chillies, sesame seeds, chana dal, urad dal, peanuts, and cashews to the pan.
- Roast the spices for 5-7 minutes, stirring occasionally, until they turn fragrant and light brown in color.
- Remove the pan from heat and let the spices cool down to room temperature.
- Add the cooled spices to a grinder or blender along with grated dry coconut and grind them to a fine powder.
- Transfer the masala powder to a bowl and add lemon juice to it.
- Mix well to combine all the ingredients.
- Your lemon rice masala powder is ready to use.
- You can store it in an airtight container for up to 2 weeks.
Notes
- You can adjust the amount of dried red chillies in the recipe to make it more or less spicy.
