Description

Kuska rice is a popular South Indian dish that is a variation of biryani. It is made without any vegetables or meat and is flavored with aromatic spices. Ingredients

  • 1 cup of Basmati rice
  • 2 tablespoons of ghee or oil
  • 1 bay leaf
  • 2 cardamom pods
  • 2 cloves
  • 1 cinnamon stick
  • 1 onion, finely chopped
  • 1 teaspoon of ginger garlic paste
  • 2 green chillies, slit
  • 1/2 teaspoon of turmeric powder
  • 1 teaspoon of red chilli powder
  • 2 cups of water
  • Salt to taste

Equipment

  • A deep-bottomed pan with a lid
  • A ladle

Method

  1. Wash the rice and soak it in water for 20 minutes.
  2. In a pan, heat ghee or oil and add bay leaf, cardamom pods, cloves and cinnamon stick.
  3. Saute for a few seconds until the spices release their aroma.
  4. Add chopped onions and saute until they turn translucent.
  5. Add ginger garlic paste and green chillies and saute for a minute.
  6. Add turmeric powder and red chilli powder and mix well.
  7. Add the soaked rice and saute for 2-3 minutes until the rice is coated with the masala.
  8. Add water and salt to taste and mix well.
  9. Cover the pan with a lid and cook on low flame for 20 minutes or until the rice is cooked and the water is absorbed.
  10. Turn off the flame and let the rice rest for 5 minutes.
  11. Fluff the rice with a fork and serve hot.

Notes

  • You can add mint leaves and coriander leaves for extra flavor.
  • If you want to make it more spicy, add more green chillies or red chilli powder.
