Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 1 onion, thinly sliced

  • 2 cardamom pods

  • 1 bay leaf
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon black peppercorns
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon ghee or oil
  • Salt to taste

Equipment

  • A heavy-bottomed pan with a lid
  • A spatula or wooden spoon
  • A measuring cup and spoons

Method

  1. Wash the rice in plenty of water and soak it for 30 minutes.
  2. Heat ghee or oil in a heavy-bottomed pan over medium heat.
  3. Add the whole spices (cloves, cardamom, cinnamon, bay leaf, cumin seeds, fennel seeds, and black peppercorns) and sauté for a few seconds until fragrant.
  4. Add the sliced onions and green chilies and sauté until the onions turn golden brown.
  5. Add the soaked and drained rice to the pan and sauté for 2-3 minutes until the rice is coated with the spices.
  6. Add 2 cups of water, salt, red chili powder, and turmeric powder to the pan and mix well.
  7. Bring the water to a boil and then lower the heat to the lowest setting.
  8. Cover the pan with a lid and let the rice cook for 15-20 minutes until all the water is absorbed and the rice is cooked.
  9. Turn off the heat and let the rice rest for 5 minutes.
  10. Fluff the rice with a fork and serve hot with raita or any gravy dish.

Notes

  • You can add a pinch of saffron to the rice for a more aromatic flavor.
  • If you don't have whole spices, you can use 1 teaspoon of biryani masala instead.
  • If you want to make the rice more rich and flavorful, you can add fried cashews and raisins on top before serving.
