- 1 teaspoon of salt
- 1 tablespoon of tomato paste
- 2 tablespoons of vegetable oil
- 3 cups of water

Method
- Wash the rice in cold water and set it aside to drain.
- Blend the tomatoes, red bell peppers, onion, and garlic cloves in a blender or food processor until smooth.
- Heat the vegetable oil in a large pot over medium heat.
- Add the blended tomato and pepper mixture to the pot and cook for 10 minutes, stirring occasionally.
- Add the smoked paprika, thyme, curry powder, tomato paste, and salt to the pot and stir to combine.
- Add the drained rice to the pot and stir to coat it in the tomato and pepper mixture.
- Add 3 cups of water to the pot and stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot with a tight-fitting lid.
- Cook the rice for 20-25 minutes or until the liquid has been absorbed and the rice is tender.
- Remove the pot from heat and let it sit for 5 minutes before fluffing the rice with a fork and serving.
