Ingredients

  • 2 cups of long-grain rice
  • 3 fresh tomatoes
  • 2 red bell peppers

  • 1 teaspoon of curry powder
  • 1 teaspoon of salt
  • 1 tablespoon of tomato paste
  • 2 tablespoons of vegetable oil
  • 3 cups of water

Method

  1. Wash the rice in cold water and set it aside to drain.
  2. Blend the tomatoes, red bell peppers, onion, and garlic cloves in a blender or food processor until smooth.
  3. Heat the vegetable oil in a large pot over medium heat.
  4. Add the blended tomato and pepper mixture to the pot and cook for 10 minutes, stirring occasionally.
  5. Add the smoked paprika, thyme, curry powder, tomato paste, and salt to the pot and stir to combine.
  6. Add the drained rice to the pot and stir to coat it in the tomato and pepper mixture.
  7. Add 3 cups of water to the pot and stir to combine.
  8. Bring the mixture to a boil, then reduce the heat to low and cover the pot with a tight-fitting lid.
  9. Cook the rice for 20-25 minutes or until the liquid has been absorbed and the rice is tender.
  10. Remove the pot from heat and let it sit for 5 minutes before fluffing the rice with a fork and serving.

Notes

For a spicier version of this recipe, add 1-2 habanero peppers to the blender when blending the tomato and pepper mixture.
