- 100g pudding rice - 600ml whole milk - 50g caster sugar - 1 vanilla pod or 1 tsp vanilla extract - Ground nutmeg, for sprinkling

Method

1. Preheat the oven to 150°C/300°F/Gas Mark 2. 2. Rinse the rice in cold water and drain well. 3. In a large saucepan, bring the milk to a boil. 4. Add the rice and stir well. Reduce the heat to low and cook for 30 minutes, stirring occasionally. 5. Add the sugar and stir until it has dissolved. 6. Split the vanilla pod in half lengthways and scrape out the seeds. Add the seeds to the rice mixture and stir well. If using vanilla extract, add it at this stage. 7. Pour the rice mixture into an ovenproof dish. 8. Sprinkle with ground nutmeg. 9. Place the dish into the oven and bake for 45 minutes to 1 hour, or until the pudding is golden brown and the rice is cooked through. 10. Serve hot or cold.

Notes

- If you don't have a vanilla pod, you can use 1 tsp of vanilla extract instead. - You can add raisins or sultanas to the pudding before baking for an extra burst of sweetness. - Leftover rice pudding can be stored in the fridge for up to 3 days.
