Method
- Rinse the glutinous rice in cold water until the water runs clear. Drain the rice and place it in a large pot with 1 1/2 cups of water. Cover the pot with a lid and bring the water to a boil.
- Reduce the heat to low and let the rice simmer for 15-20 minutes or until the rice is tender and the water has been absorbed.
- In a saucepan, heat the coconut milk over medium heat. Add the palm sugar and salt, and stir until the sugar has dissolved.
- Remove the rice from the heat and add the coconut milk mixture. Stir well to combine.
- Cover the pot with a lid and let the rice sit for 10-15 minutes to absorb the coconut milk.
- In the meantime, slice the mango and set aside.
- Once the rice has absorbed all the coconut milk, fluff it with a fork and transfer it to a serving dish.
- Arrange the sliced mango on top of the rice and sprinkle with sesame seeds (optional).
- Serve warm or at room temperature.
