- 2 cups of long-grain rice
- 1 pound of chicken, cut into bite-sized pieces
- 1 large onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 cloves of garlic, minced
- 1 tablespoon of ginger, minced
- 1 tablespoon of tomato paste
- 1 can of diced tomatoes
- 2 cups of chicken broth
- 2 tablespoons of vegetable oil
- 2 tablespoons of butter
- 1 teaspoon of smoked paprika
- 1 teaspoon of curry powder
- 1 teaspoon of thyme
- Salt and pepper to taste

- A large pot with a lid
- A wooden spoon
- A sharp knife
- Cutting board
Method
- Heat the vegetable oil and butter in a large pot over medium heat.
- Add the chicken and cook until browned on all sides, about 5 minutes.
- Remove the chicken from the pot and set aside.
- Add the onions, garlic, and ginger to the pot and sauté until the onions are translucent, about 5 minutes.
- Add the diced bell peppers to the pot and sauté for an additional 5 minutes.
- Add the tomato paste, diced tomatoes, smoked paprika, curry powder, thyme, salt, and pepper to the pot and stir well.
- Add the rice to the pot and stir until it is well coated with the tomato mixture.
- Add the chicken broth to the pot and stir well.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
- Simmer the rice for 20-30 minutes, or until the rice is cooked and the liquid has been absorbed.
- Fluff the rice with a fork and add the chicken back to the pot.
- Stir well and let the chicken warm through for a few minutes.
- Remove from heat and serve hot.
