- 2 tablespoons jerk seasoning

- 1 1/2 cups chicken broth
- 1/2 pound ground beef
- 1/2 cup diced onion
- 1/2 cup diced green pepper
- 1/2 cup diced celery
- 1 clove garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Method
For the jerk chicken:
- Preheat the oven to 375°F.
- In a large bowl, mix together the jerk seasoning, olive oil, honey, and soy sauce.
- Add the chicken thighs to the bowl and toss to coat thoroughly.
- Place the chicken thighs on a baking sheet and bake for 45-50 minutes, or until the internal temperature reaches 165°F.
For the dirty rice:
- Rinse the rice in cold water and drain well.
- In a large pot, bring the chicken broth to a boil.
- Add the rice to the pot, cover, and reduce heat to low.
- Simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
- In a frying pan, brown the ground beef over medium-high heat.
- Add the onion, green pepper, celery, and garlic to the frying pan and sauté until the vegetables are softened.
- Add the cumin, paprika, salt, and black pepper to the frying pan and stir well.
- Add the cooked rice to the frying pan and stir to combine.
- Reduce heat to low and cook for 5-10 minutes, or until the flavors are well combined.
- Serve the jerk chicken with the dirty rice on the side.
Notes
