Description

Japanese long rice, also known as Koshihikari, is a type of short-grain rice that is native to Japan. It is known for its sticky texture and sweet flavor, making it a popular choice for sushi, rice bowls, and other Japanese dishes. This recipe will guide you on how to cook Japanese long rice at home.

Prep Time

10 minutes

Cook Time

20-25 minutes

Ingredient

  • 2 cups Japanese long rice
  • 2.5 cups water
  • 1 tbsp. rice vinegar
  • 1 tbsp. sugar
  • 1 tsp. salt

Equipment

  • Rice cooker or pot with a tight-fitting lid
  • Measuring cups and spoons
  • Bowl
  • Wooden spoon or spatula

Method

  1. Rinse the rice with cold water until the water runs clear. Drain the rice and let it sit in the colander for 10-15 minutes.
  2. In a bowl, mix rice vinegar, sugar, and salt until the sugar and salt dissolve. Set aside.
  3. Add the rice and water to the rice cooker or pot. If using a pot, cover with a tight-fitting lid and bring to a boil over high heat.
  4. Once the water comes to a boil, reduce the heat to low and simmer for 15-20 minutes until the water is absorbed and the rice is tender.
  5. Remove the pot from the heat and let it sit covered for 10 minutes.
  6. Fluff the rice with a wooden spoon or spatula.
  7. Drizzle the vinegar mixture over the rice and mix gently with the wooden spoon or spatula to combine.
  8. Cover the rice and let it sit for another 5-10 minutes.
  9. Fluff the rice again and serve.

Notes

  • Japanese long grain rice is very sticky, so it is important to rinse it thoroughly before cooking.
  • Do not lift the lid of the pot while the rice is cooking or steaming, as this will release the steam and affect the cooking process.
  • If you don't have rice vinegar, you can use apple cider vinegar or white wine vinegar instead.
