- 2 cups of basmati rice
- 2 tbsp of oil
- 1 tsp of mustard seeds
- 1 tsp of cumin seeds

- 1 tsp of fennel seeds
- 1 tsp of turmeric powder
- 1 tsp of red chili powder
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1 cup of mixed vegetables (carrots, beans, peas)
- 2 cups of water
- Salt to taste
Equipment
- A large pot with a lid
- A spatula
- A cutting board and knife
Method
- Wash the rice and soak it in water for 30 minutes.
- Heat the oil in a pot and add the mustard seeds, cumin seeds, coriander seeds, and fennel seeds. Fry them until they start to pop.
- Add the chopped onion and fry until it becomes translucent.
- Add the chopped tomato and fry until it becomes soft.
- Add the mixed vegetables and fry for a few minutes.
- Add the turmeric powder, red chili powder, and salt. Mix well.
- Drain the water from the soaked rice and add it to the pot. Mix well.
- Add 2 cups of water and mix well.
- Cover the pot with a lid and let the rice cook on medium heat for 20-25 minutes or until the water has been absorbed and the rice is cooked.
- Once the rice is cooked, turn off the heat and let it sit for 5 minutes.
- Fluff the rice with a fork and serve hot.
Notes
- You can add more or less vegetables depending on your preference.
- You can also add cashews, raisins, or fried onions as a garnish.
- This dish can be served with raita or papad.
