Ingredients

  • 4 chicken breasts, cut into cubes

  • 1 tbsp. curry powder

  • 1 tbsp. mango chutney
  • 1 tbsp. soy sauce
  • 1 tbsp. honey
  • 300g basmati rice
  • 600ml chicken stock
  • Salt and pepper to taste

Method

  1. Heat the sunflower oil in a large saucepan over medium heat. Add the onion and garlic, and sauté until the onion is soft and translucent.
  2. Add the chicken to the saucepan and cook until browned on all sides.
  3. Add the red and green peppers, curry powder, tomato puree, mango chutney, soy sauce, and honey. Stir well to combine.
  4. Add the basmati rice to the saucepan and stir well to coat the rice in the chicken and spice mixture.
  5. Add the chicken stock, salt, and pepper, and bring to a boil. Reduce the heat to low, cover the saucepan with a lid, and simmer for 20-25 minutes or until the rice is cooked and tender.
  6. Remove the saucepan from the heat and let it rest for 5 minutes.
  7. Fluff the rice with a fork and serve hot.
