- 2 cups of long-grain white rice
- 1/2 cup of frozen peas and carrots
- 1/2 cup of diced onions
- 1/2 cup of diced celery
- 2 cloves of garlic, minced
- 3 tablespoons of vegetable oil
- 2 eggs, beaten
- 1/2 cup of diced cooked chicken or shrimp (optional)
- 2 tablespoons of soy sauce
- Salt and pepper to taste
Equipment
- A wok or large frying pan
- A rice cooker or pot to cook the rice
- A cutting board and knife
- A wooden spoon or spatula
Method
- Wash the rice and cook it according to package instructions. Once cooked, fluff the rice with a fork and set it aside to cool.
- Heat the wok or frying pan on medium-high heat and add the vegetable oil.
- Add the onions, celery, and garlic to the wok and stir-fry for 2-3 minutes until the vegetables are tender.
- Add the cooked chicken or shrimp (if using) and the frozen peas and carrots to the wok and stir-fry for another 2-3 minutes.
- Move the vegetables and protein to one side of the wok and add the beaten eggs to the other side. Scramble the eggs until fully cooked.
- Add the cooked rice to the wok and stir-fry for 2-3 minutes until the ingredients are well combined.
- Add the soy sauce and salt and pepper to taste. Stir-fry for another minute.
- Remove from heat and serve hot with a side of chilli sauce or sambal.
