- 1 inch cinnamon stick (dalchini)
- 2-3 green cardamom (choti elaichi)
- Salt to taste

- Non-stick pan or kadhai

Method
- Wash the rice thoroughly and soak it in water for 30 minutes.
- Heat oil or ghee in a pressure cooker or pot.
- Add cumin seeds, bay leaf, cloves, cinnamon stick, and green cardamom. Saute for a few seconds until they start to splutter.
- Add the soaked rice and saute for 1-2 minutes until the rice is lightly toasted.
- Add 2 cups of water and salt to taste. Mix well.
- Cover the pressure cooker or pot with a lid and cook on medium flame for 2 whistles if using a pressure cooker or until the rice is cooked if using a pot.
- Let the pressure release naturally if using a pressure cooker.
- Open the lid and fluff the rice with a fork.
- Heat a non-stick pan or kadhai and add 1 tablespoon of oil or ghee.
- Add the cooked rice and saute for 2-3 minutes until the rice is lightly fried.
- Jeera Rice is now ready to serve.
Notes
- You can adjust the amount of cumin seeds according to your taste.
- You can also add other whole spices like black cardamom, star anise, etc. for additional flavor.
- If you don't have a pressure cooker, you can cook the rice in a pot with a lid on medium flame for 20-25 minutes or until the rice is cooked.
