Ingredients

  • 1 cup jasmine rice
  • 2 cups water

  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can diced tomatoes, drained
  • 1 can black beans, drained and rinsed
  • 1/2 cup frozen peas
  • 2 tablespoons chopped fresh parsley, for garnish

Method

  1. Rinse the jasmine rice in cold water and set aside.
  2. Heat the olive oil in a large saucepan over medium heat.
  3. Add the onion and garlic and sauté for 2-3 minutes until softened.
  4. Add the red bell pepper, smoked paprika, cumin, salt, and black pepper and cook for another 2-3 minutes.
  5. Add the drained diced tomatoes, black beans, and frozen peas and stir to combine.
  6. Add the jasmine rice and water to the saucepan and stir to combine.
  7. Bring the mixture to a boil then reduce the heat to low and cover the saucepan with a lid.
  8. Simmer the rice for 18-20 minutes or until the water has been absorbed and the rice is tender.
  9. Remove the saucepan from the heat and let it sit for 5 minutes.
  10. Fluff the rice with a fork and garnish with chopped fresh parsley before serving.

Notes

This recipe can easily be made vegan by swapping out the chicken broth for vegetable broth. It can also be made with brown rice or quinoa for a healthier version.
